Summer time calls for lighter meals full of foods that fuel your active lifestyle. 

I like my meals to have a hefty amount of


*dark green veggies

*prebiotic/probiotic foods like onions and sauerkraut

*healthy fats (think: coconut oil, butter, avocado oil, duck fat)

My kiddos just had the ham and eggs + a bowl of yogurt and berries so they could get in some fruit + fermented food. 

Keep things simple by mixing and matching eggs with various vegetables for breakfast or even as a lunch/dinner meal! 

2 eggs
1/4 cup onion, roughly chopped
1/4 cup smoked ham, chopped
1/2 cup shiitake mushrooms, roughly chopped
1 cup spinach
2 T avocado oil or butter

1. Heat a skillet to medium heat. Add oil + onions, ham and mushrooms. Continue stirring around with oil until veggies are softened. 

2. Meanwhile, cook 2 eggs to over medium. 

3. Turn off heat and add spinach to veggies, stirring a few times just to soften and then remove immediately. 

4. Add veggies + ham to a bowl and place eggs on top. Garnish with raw sauerkraut (our favorite is smoked jalapeno sauerkraut from Whole Foods or Sprouts).

Enjoy with a hot cup of coffee!
