I've been in quite a productivity funk this week with a husband who's traveling and two toddlers who have decided to lose their minds every 30 seconds all day long.
It's fun to pretend that life is pretty great sometimes but most of the time it's hard.
Can I get an amen?
Toddlers have a way of bringing you to your end in the most ridiculous ways.
Waking up to honey poured all over the counters. Car seat peed in, again. Or a car seat blow out that took my hubby and I ONE HOUR to clean up in the middle of a hotel parking lot (yep, Sunday's after jam right there). Screaming every 5 seconds for no apparent reason other than his brother looked at him wrong. Serving them the wrong colored plate. Not being allowed to get dressed without random objects flying at your head as you try to stick your arms through your shirt holes without getting pegged in the head by a library book.
Ya know, stuff like that.
So, what does that have to do with this salad? Nothing. Absolutely nothing.
...other than I had to hire a babysitter to have time to go to the store and get the ingredients and spend one hour putting them down for a nap so I could create this recipe in peace.
In case you're wondering, I do actually like my kids.

Crunch Tomato Summer Salad
1 small carton of cherry tomatoes, halved
3/4 of a large cucumber, diced
1 jalapeno, deseeded and minced
4 radishes, diced
1 bunch of green onions, diced
4 basil leaves, minced
1 lime, halved
2 T avocado oil
salt + fresh cracked pepper to taste
Place all ingredients in a medium-sized bowl, squeeze lime on top plus add oil and salt + pepper to taste. Enjoy as a side or a main salad dish!
