It's going to be a rainy and snowy week here in Denver, which called for the creation of a new recipe, involving the most delicious seasonal spring fruit: the strawberry. 

As I sit here with a cup of hot coffee, munching on one of these flavor-packed muffins, I have a few minutes of space to think, and just be.  

The practice of sitting down with homemade food +  a hot drink, something I did frequently before kids, has become a rare treasure these days that truly fills my "cup" to the brim. 

If you are a mom, or have a job that requires you to give of your mental and physical self all day long, self-care must become as important as brushing your teeth and sleeping. 

Think back to what you did before kids or the taxing job you currently hold. What helped you rest? What restored you mentally and physically? 

Do that. As much as you can. Schedule it, even. 

I hope you enjoy these spring-like muffins. In addition to the probiotic-rich kefir, I made mine with sprouted flour to improve the nutrient content and digestibility. 

I describe these as hearty, protein and fiber-rich, soft, and bursting in flavor. If you're looking for a really sweet muffin, this is not your guy. But, once you begin to eat baked goods that are low in sugar, the sweet ones will quickly lose their appeal and overpower the tastebuds. 

Slow down and enjoy! 

Strawberry Spelt Kefir Muffins
Makes 18 muffins

1 3/4 cup spelt flour (I buy the sprouted spelt flour from Sprouts) 
1/4 cup hemp seeds
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar
2 large eggs
1/2 cup avocado oil
1 cup full-fat, plain kefir
1 tsp vanilla
2 cups fresh strawberries, sliced

Preheat oven to 375. Place dry ingredients in a medium-sized bowl. Stir well. 

Add all wet ingredients, except strawberries, to a smaller bowl, stirring well to combine. 

Add wet ingredients to dry, gently stirring to combine. Add strawberries, combine gently. 

Pour into 18 greased muffin tins (the batter is relatively thick). 

Bake for 20 minutes, or until they are cooked through. 

Enjoy with a pat of grass-fed butter!
