We officially have a new favorite dessert in our house. 

Since we eat a gluten and mostly dairy-free diet, I'm always trying to whip up new things in the kitchen that will be full of good fats but void of tons of sugar, and this one fit the bill. 

This dessert is very rich with the coconut fat so a few bites will quickly satisfy that chocolate craving!

Dark Chocolate Fudge
serves 4-6

2, 13.5 oz cans of full-fat coconut milk (you are just using the cream off of the top)
1/4 cup coconut milk (use the milk from one of the cans above)
4 oz dark chocolate chunks, melted
1/2 cup cocoa powder
1 t vanilla
1 T maple syrup

Add all ingredients to a food processor. Blend until completely combined. Place in a container with a lid and refrigerate. 

The longer it stays in the fridge the more firm it will become. If you want more of a pudding consistency, eat after 1-2 hours chilled. For a fudge-like consistency, leave overnight.
