I could either keep eating my junk food diet and stay sick, or take a new path. <br><br>I don't think I ever had a moment where I said, 'I'm going to start living healthy from this day forward;' rather, as I began to frequent the farmers' markets and eat oatmeal for breakfast instead of Apple Jacks, I began to fall in love the world of whole foods and natural living. It was refreshing to a girl who previously preferred Doritos and mountain dew over any foods. <br><br>I'll be the first to admit, junk food tastes great in the moment. When you are having a rough day or just need a 'pick me up,' Doritos and cookies sound a lot better than a plate full of sprouts for lunch. But, what about after you eat the junk? If you're like me after eating junk, you're tired, cranky, and unmotivated. <br><br>Ugh. But it <em>tasted</em> so good!<br><br>Junk food never made me look unhealthy in terms of my weight, but I was rotting from the inside out. I could write a book about all of the ways my health changed after I slowly starting eating more fruits, vegetables, nuts, seeds, etc. <br><br>I do this coaching thing because I love helping clients jump to the other side with me. I know what it's like to be over there--you're desperate for more energy and <span>you kinda wonder what life would be like if you made different choices...BUT,</span> you just want to be left alone with your cake. <br><br>I get the struggle. <br><br>My mission is to help you dip your toes in the world of healthy living at <em>your</em> pace. I give you the tools for success, but the ball is in your court. <br><br>One of the ways I help you dip your toes in is by coming up with simple ways for you to add more health to your life. This sprout recipe is easy, wonderful, and delicious. If you don't like them, try adding some bacon on top--bacon makes everything good and everyone happy. Am I right?!<br><br>Enjoy :)<br><br><strong>Roasted Brussel Sprouts</strong><br>Serves 2<br><br>1-2 cups brussel sprouts, edges trimmed<br>1 T avocado or coconut oil<br>salt, pepper, and garlic powder to taste (i love lots of himalayan sea salt on these!)<br>1/4 tsp crushed red pepper (optional if you don't like spicy)<br><br>Preheat oven to 400. Place sprouts in a cast-iron skillet or another dish of choice for roasting and drizzle with oil, stir to coat. Add spices, stirring again. Place in oven for 10-15 minutes. I like mine on the crunchy side so 10 minutes is good for me. <br><br>I love to eat my sprouts with salmon, chicken, or just a side of couscous or brown rice. <br><br><br><br><br> </div>
