Can I get an amen?<br><br>Thankfully, the big salads I was going to prepare for us in the condo could easily be chopped up into mason jars for the road. <br><br>If vegetables are something you have a hard time getting into your diet, prepping a salad in a jar is a great way to get your vegetable prepared for the week ahead without spending time chopping each day in the kitchen. <br><br><u><strong>Mason Jar Spinach Salad</strong></u><br>-spinach<br>-baby broccoli (this is much more tender than a big head so I use it in all of my salads)<br>-cucumber, sliced<br>-green onions<br>-sliced almonds<br>-raisins<br>-ham, chopped (we get ours at sprouts or whole foods)<br>-your favorite all-natural balsamic-vinegar dressing<br><br>Place dressing in the very bottom of jar. Then, layer spinach, broccoli, followed by sliced cucumber. Do this 3 or 4 more times until your jar is almost full. Top with chopped green onions, raisins, and sliced almonds. <br><br>When you are ready to eat your salad, turn your jar upside down and let the dressing pour over your contents. <br><br>Serve with a slice of crusty sourdough bread.<br> </div> </td> </tr></tbody></table> </div></div></div>
