It keeps me sane, the kids are happy about instant food, and we can head out for an early hike or morning at the park without having a big mess to clean up. <br><br>If you're not a parent, maybe you make this for the sheer fact of not being able to function enough to cook anything with substance in the mornings. <br><br>So go ahead.<br><br>Roll yourself out of bed.<br><br>Pour the coffee.<br><br>And enjoy your delicious bowl of peanut butter goodness.<br><br>Health comes easy today, friends. <br><br><strong>Peanut Butter Chia Oats<br>Serves 4-6 </strong><br>2 cups rolled oats<br>3 T chia seeds<br>2 cups whole milk (<a target="_blank" href="http://www.rachelmeyerfitness.com/blog/homemade-cashew-milk">or this cashew milk</a>); this makes a really thick and creamy oatmeal, if you want it runnier, add another 1/2 cup milk. <br>3 T maple syrup<br>6-8 T peanut butter<br><br>Mix all ingredients together in a medium-sized bowl (or right in mason jars to take on the go), except peanut butter. Add peanut butter and gently fold into mixture. This allows you to have some nice thick swirls of peanut butter for the next morning. If you'd rather not have chunks of peanut butter, just stir it in more thoroughly. <br><br>Place oatmeal in refrigerator (covered) overnight. Serve with yogurt, granola, and bananas the next morning! <br><br> </div>
