Things get cray. <br><br>We came home not quite full from the array of popcorn, chips, and meatballs fed to us at Costco. <br><br>I asked my 3-year-old what he wanted for lunch and he responds with, "homemade pizza!"<br><br>No. Just no. <br><br>Try again. <br><br>"Toast!"<br><br>Okay, I'm making this decision.<br><br>We're having chicken artichoke-mozzarella brats with avocado and sautéed vegetables. <br><br>After you've just drug two tired toddler around Costco for hours + carried 300 pounds of food into your house, fixing fancy meals is just not in the cards. <br><br>But, I still wanted to fix an easy, balanced meal to help get some protein and veggies in my big guys. <br><br>I turned on the burner to heat up my cast-iron skillet. I put the chicken brats along with sliced bell pepper and onions in pan with a dab of grass-fed butter (thank you Kerigold). <br><br>While this was cooking I sliced an avocado. <br><br>Then, I put all of the food on a plate. <br><br>Really, it was easier than pouring a bowl of cereal + you feel good about eating real, whole food when you could have just stuffed your face with junk. <br><br><strong>Chicken Brat Veggie Platter with Sliced Avocado</strong><br>Serves 4<br><br>4 Chicken Brats (or brat/hot-dog of choice; grass-fed/pasture-raised with REAL meat is best)<br>1-2 whole bell peppers + 1/2 cup onions, sliced<br>1 avocado, sliced<br>salt, pepper to taste<br>raw sauerkraut for topping brat; optional<br><br>Warm brat + saute veggies in same pan for about 5-7 minutes. Season veggies with salt + pepper are you saute them. <br><br>Serve with sliced avocado. <br><br>Enjoy!</div>
